Apple Pie and Custard


Perfect Winter comfort food!


Ingredients:


For the apple pie:

  • 5-6 large apples, peeled, cored and thinly sliced ​​(preferably Granny Smith type)
  • 1 cup of sugar
  • 2 teaspoons of ground cinnamon
  • 1/4 teaspoon of nutmeg
  • 1 teaspoon of vanilla extract
  • 2 cups of wheat flour
  • 2 teaspoons of baking powder
  • 1/2 cup melted butter
  • 2 eggs
  • 1/2 cup of milk


For the custard:

  • 2 cups of milk
  • 1/4 cup of sugar
  • 2 egg yolks
  • 1 teaspoon of vanilla extract
  • 2 tablespoons cornstarch (corn starch)


Method


  1. Preheat oven to 350°F (180°C).

  2. In a large bowl, combine the apples, sugar, cinnamon, nutmeg, and vanilla. Let rest while you prepare the dough.

  3. In another bowl, mix the flour and baking powder.

  4. Add the melted butter, eggs and milk. Mix well until you get a smooth dough.

  5. Spread the dough in a greased baking pan.

  6. Add the apple mixture on top of the dough and distribute evenly.

  7. Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

  8. To make the custard, heat milk in a saucepan over medium heat until hot but not boiling.

  9. In a separate bowl, mix the egg yolks, sugar, and cornstarch until smooth.

  10. Slowly add the hot milk to the yolk mixture, whisking constantly.

  11. Pour the mixture back into the saucepan and cook over medium-low heat, stirring constantly, until thickened.

  12. Remove from the heat and add the vanilla extract.
