Chicken Chauseur

Cooking Time: 20 mins


This excellent dish can be prepared in 20 minutes and has a big meaty flavour.





Ingredients:

 

8 rashers streaky bacon, chopped into large pieces


4 chicken breasts, cut into large chunks


200g pack baby button mushrooms


1 tbsp plain flour


400g tin chopped tomatoes with garlic


(or 1-2 cloves crushed garlic)


1 beef stock cube


Dash Worcestershire sauce


Handful parsley, chopped

 




AND THIS IS WHAT YOU DO…

 

1.  Heat a shallow saucepan and sizzle the bacon for about 2 mins until starting to brown. 

2.  Throw in the chicken, then fry for 3-4 minutes until it has changed colour. Turn up the heat and throw in the mushrooms. Cook for a few minutes.

3.  Stir in 1 tablespoon of flour and cook until a paste forms.

4.  Tip in the tomatoes and garlic, stir, then crumble in the stock cube.

5.  Bubble everything for 10 minutes, splash in the Worcestershire sauce, stir through the parsley.

6.  Serve with mashed potatoes or rice.
