Easy to prepare recipe, highly recommend by my friend Tamsyn as this soup is a great favourite.





Ingredients

    1 large onion, chopped

    4 gloves garlic, sliced

    1 tbsp olive oil

    4 medium courgettes, diced (I used half an enormous yellow courgette the size of a marrow and could have easily
     used the entire vegetable!)

    1 litre vegetable stock

    125g grated parmesan

    Seasoning

    To Garnish

    Drizzle Virgin Olive Oil

    Sprinkling of Dukkah

    Diced cooked courgette or Courgetti that has been stir fried for one minute in olive oil.




AND THIS IS WHAT YOU DO.....

  1. In a large pot sweat the chopped onion and sliced garlic in the olive oil until golden.

  2. Add the courgettes and stock, bring to the boil and simmer for 15-20 minutes.

  3. Blend the soup until smooth, then add the parmesan and blend again.

  4. Taste and add a little seasoning with Sea Salt and freshly ground black pepper.

  5. Serve immediately with fresh crusty bread.
