Grilled Nectarines with Amaretto and Almonds

Ingredients

  • 6 nectarines or peaches, halved

  • 3tbsp amaretto liqueur

  • 2tbsp soft brown sugar

  • 2tbsp flaked almonds

  • 4 amaretti biscuits



To serve


  • Ice cream, thick cream or Greek yoghurt




AND THIS IS WHAT YOU DO....


  1. Preheat the barbecue or grill. If grilling, place the fruit in a dish and sprinkle with the amaretto and sugar.

  2. Cook until soft, charred and caramelised at the edges.

  3. If barbecuing, cook the fruit flesh-side down until you have deep golden griddle lines; to finish off place cut-side up in a baking dish, sprinkle with the liqueur and sugar and put in a medium oven for 10 minutes to soften the fruit all the way through.

  4. Scatter with flaked almonds and crushed amaretti biscuits.

  5. Serve with ice cream, thick cream or Greek yoghurt.
