Meatball and Oriental Noodle Stir Fry

Cooking time 10 mins  

 




Ingredients:

 

450g pack good-quality sausages


200g/8oz thick or medium egg noodles


4 tbsp soy sauce


2 tbsp clear honey


Juice 1 large orange


2 tbsp groundnut or vegetable oil


2 garlic cloves, crushed


5cm fresh ginger, peeled and grated


200g bag stir-fry vegetables


200g pack sugar snap peas


1 bunch spring onions, shredded lengthways


2 tbsp sesame seeds, toasted

 


 

 

AND THIS IS WHAT YOU DO…

 

  1. Heat over to 200c/Fan 180c/Gas 6.

  2. Squeeze sausage meat from the skins into a large bowl.

  3. Then, using your hands, roll the meat into meatballs, getting about three from each sausage. Place on a roasting tray, cook for 10-12 mins until golden and cooked through.

  4. Meanwhile, cook the noodles according to pack instructions.

  5. In a small bowl, mix together the soy sauce, honey and orange juice.

  6. Heat a large non-stick wok or frying pan and add the oil.

  7. Add the garlic, ginger then fry for 1 min.

  8. Add the stir-fry veg for 3 mins, then add the sugar snaps and spring onions for the final minute of cooking.

  9. Drain the noodles, add to vegetables, along with the soy sauce mixture.   

  10. Toss well, season, then scatter with the sesame seeds.

  11. Serve in warm bowls and top with the sausage meatballs.
