Poached Salmon with Creme Fraiche, Peas and Broad Beans

This is a perfect supper party dish and perfect served with creamy mashed potatoes and fresh brocolli



Ingredients:

1 -2 tbs olive oil

2 leeks, thinly sliced

250 ml / 9 fl oz fish stock

150g / 6 oz creme fraiche

150g / 6 oz frozen petit pois

150g / 6 oz frozen baby broad beans

4 skinless salmon fillets

Sea Salt

Freshly ground black pepper



AND THIS IS WHAT YOU DO....

  1.     Heat the oil in a large frying pan and add the leeks.  Cook these gently for 5 - 10 mins until softened, but not browned.

  2.     Add the creme fraiche and a modest amount of seasoning.   Cook for about a minute.

  3.     Nestle the salmon fillets in the juices, cover with a lid and cook for about 12 minutes.

  4.     Now add the frozen vegetables and spoon these well into the creamy mixture and leave to stand for up to half an hour, if desired.

  5.     Just warm through immediately before serving.
