Easy to make and no cooking

This is inspired from putting fruit from our fruit cage into my Magimix with yogurt and honey and requires no cooking - so quick and easy.   You can also make this recipe using any combination of pre frozen fruits which come in 500g bags in the local supermarket.

Ingredients:

500g of mixed berries (either frozen or fresh)

500 ml pot of Thick Greek Style Natural Yoghurt

8 tbs clear honey, or more if you prefer it to be sweeter

⅛ teaspoon of either xantham or guar gum

AND THIS IS WHAT YOU DO…..

  1. Combine all ingredients into an electric mixer (I used my Magimix for this) and whizz until well mixed but with small bits of fruit still visible in the mixture.

  2. Pour into a litre container and then secure the lid, label and freeze.

  3. Allow the ice cream to freeze overnight.

  4. Remove from fridge 20 - 30 mins before serving.
