Mango, Passion Fruit, Lime and Coconut Ice Cream

Serves 8

Wonderful creamy texture plus the crunch of the passion fruit seeds, which you can exclude if you prefer.





Ingredients

2 mangoes, peeled and cubed

6 passion fruits

2-3 limes, juice only

400g full fat coconut milk

2 x 160 ml cartons coconut cream

 ⅛ teaspoon of either xantham or guar gum

1 cup of maple syrup, or more if you like it sweeter


AND THIS IS WHAT YOU DO.....

  1. Place all ingredients, except passion fruit, into a liquidiser and pulse until smooth and creamy.

  2. Now stir in the pulp of the passion fruit, but remove the seeds if not required.

  3. Now freeze in an ice cream maker for 30 - 45 mins, or according to manufacturer's instructions.

  4. If you have no machine, then pour the mixture into containers and put into the freezer.    Remove after one hour and stir.   You may have to repeat this process two or three times more to prevent ice crystals forming.

  5. Remove from freezer for 20 - 30 mins before serving.
