Apricot, Honey and Pistachio Flapjacks

Ingredients



140g butter



140g Brown sugar (or coconut sugar)



2 tablespoons runny honey



175g rolled oats



75g chopped pistachios



140g dried chopped apricots







AND THIS IS WHAT YOU DO...



  1. Pre-heat oven to 160C, 140C Fan, Gas 3.
    
    
  2. Grease and line a 20cm x 20 cm baking tray with grease proof paper.
    
    
  3. Put butter, sugar and honey into a small pan and heat gently until melted.
    
    
  4. Tip rolled oats, chopped apricots and pistachios into a large bowl.
    
    
  5. Pour the melted butter mixture into the dried ingredients and stir to combine.
    
    
  6. Transfer to lined baking tray and bake for 35 - 40 minutes.
    
    
  7. Remove from the oven, cool in tin, then slice into 16.
