Chicken with White Beans, Paprika and Bacon

Chicken with White Beans, Paprika and Bacon



Serves 4

Cooking time: 25 mins





 

Ingredients:


1 red onion, sliced


100g/4oz lardons


1 tbsp olive oil


2 x 410g cans cannellini beans, rinsed and drained


400g chopped tomatoes


4 skinless boneless chicken breasts


1 tsp dried thyme


½ tsp paprika, or more according to taste


Seasoning

 

 

 

 

AND THIS IS WHAT YOU DO………

 

1.  Stir the onion, bacon and olive oil together in a shallow microwave dish. Cover the dish with cling film or lid and cook on high for 5 minutes.

2.  Stir in the beans and tomatoes. Place the chicken on top of the beans and season with salt and freshly ground black pepper. Sprinkle over the thyme and paprika.

3.  Cover the dish with lid or cling film and pierce several times. Cook on high for 15 minutes. Leave to stand for 3 minutes, before removing lid. 

4.  Serve with lots of crusty bread to soak up the juices.
