Pineapple Layer Cake with Lemon Icing

This delicious and indulgent cake comes from The Joy of Cooking - an American publication in 1953 from which my mother used to make for special occasions.   The cake is soft and moist from using crushed pineapple and the tangy icing compliments this cake beautifully.


Ingredients

1 cup (128g or 8 oz) castor sugar

½ cup (64g or 4 oz) butter

3 egg yolks

3 egg whites

2½ cups (320g or 1lb 4 oz) of plain flour

2 teaspoons baking powder

½ teaspoon of baking soda

½ teaspoon of salt

½ cup (4 oz) orange juice (freshly squeezed)

½ teaspoon almond (or 1 teaspoon vanilla essence)

9 oz can of crushed pineapple

For the Lemon Icing

2 cups (226g or 8 oz) icing sugar

¼ cup (56g or 2 oz) soft butter

Grated rind and juice of one lemon

1 or more teaspoons of cream



AND THIS IS WHAT YOU DO...

  1. Heat the oven to 350˚C

  2. Sift three quarters of a cup sugar and add the butter and cream until fluffy.

  3. Beat in the three egg yolks, one at a time.

  4. Sift flour together with the salt, baking soda and baking powder and set aside.

  5. Combine the orange juice with the almond or vanilla essence and then add the crushed pineapple and set aside.

  6. Add small amounts of the flour mixture to the creamed butter and sugar mixture with small amounts of the liquid ingredients.   Do this in equal amounts and beat until the batter is smooth after each addition.

  7. Whip the three egg whites until stiff but not too dry.   Now add the remaining ¼ cup of sugar into the egg whites and then fold into the batter.

  8. Divide the mixture between two  greased and lined 9 inch (23 cms) baking tins and bake for about ½ hour, checking with a dry knife.

  9. When done, turn out carefully onto a rack for cooling.

  10. To make the Lemon Icing - blend together the icing sugar and soft butter and then beat in remaining ingredients.

  11. When the cake is cool, you can then spread a layer of icing between the two layers of each cake and then spread the icing on top of the cake.

  12. You could decorate with pecans or walnuts if desired.
