Quick Prawn Noodle Soup

Quick Prawn Noodle Soup

Ingredients


179g / 6oz thick rice noodles


1 litre / 36fl oz hot chicken or vegetable stock


2 teaspoons fish sauce


Juice of one lime


2 star anise


2 pinches sugar


One pack of raw prawns (I usually keep a supply of these in the freezer)


One bunch of salad onions, washed and finely chopped


Handful of mint and coriander leaves


Chopped red chilli, to serve






AND THIS IS WHAT YOU DO....


  1. Boil the noodles until al dente, then drain

  2. Put the stock into a pan with the fish sauce, lime juice, salad onions, star anise and sugar.

  3. Bring to the boil and add the noodles and prawns.

  4. Warm through, then pour into a bowl and serve topped with the mint, coriander and chilli.  (Remove the star anise before serving)
