Quinoa and Sun Blush Tomato Burgers


Makes 12 burgers


These are so easy to make and taste really good.   I have been really generous

with the ingredients as these are all about flavour.   They look pretty as well!


We served these with the Pan Fried Courgettes with Mozzarella and Dukkah



Utensils:


  • Large pan for boiling water
  • Measuring jug for vegetable stock
  • Chopping board
  • Sharp knife
  • Bowls to lay out prepared ingredients
  • Large mixing bowl to combine all ingredients
  • 2 flat baking trays
  • Pastry cutter to shape burgers
  • Greaseproof paper to line both trays



Ingredients:

 

  • 175g/6oz Quinoa (cook according to instructions in the veg stock) or use Quinoa Flakes, which you simply cover with boiling water and allow to absorb and use immediately
  • 200ml/7fl oz hot vegetable stock
  • 1 large egg beaten
  • 4 tbsp natural yoghurt
  • Salt and freshly ground black pepper
  • 200g Goat's cheese, crumbled (we used either Bettine or Soignon) or you can use a pack of Feta
  • 270g pack Sun Blush tomatoes, finely chopped with scissors (save oil)
  • 1 bunch spring onions,(6 or more) finely chopped including green parts
  • 1 bunch of fresh parsley, finely chopped
  • Half bunch of fresh basil, finely chopped
  • 2 tbsp sunflower oil or instead, use the oil from the Sun Blush tomatoes





Method



  1. Preheat the oven to 200C.

  2. Cook the Quinoa according to instructions in the vegetable stock, drain into a large bowl.

  3. In a separate bowl, add the egg and yoghurt and mix well.   Season, then fold through the cheese, tomatoes and spring onions.

  4. Fold the egg and cheese mixture into the Quinoa and mix thoroughly.

  5.  Divide the mixture into twelve and shape into burgers using a smallish pastry cutter.

  6. The best way to cook these burgers are to place each burger onto a baking tray or into a roasting tin, drizzle the oil on top and around each burger and bake in the oven until golden, which will probably take about 20 minutes.   You could fry these, but I found they just disintegrated however careful I tried to be, so baking is better!  Please NOTE that all ovens vary and so you need to keep a watchful eye on the burgers until they start to turn golden.

  7. Serve with a green salad, new potatoes and a spoonful of your favourite chutney or home made dipping sauce (herby yogurt).   Alternatively, serves this with another vegan or vegetarian dish or two.   They can also be eaten cold.
