Salmon and Sweet Potato Bake

This dish can be simply presented with just lemon, herbs and seasoning

or you could quickly knock up a Parsley and Breadcrumb topping to form a tasty crust.



Ingredients


  • 1-2 tablespoons olive oil
  • 500g sweet potatoes, peeled and cut into wedges
  • 400g cherry tomatoes, best on vine
  • 300g head of broccoli, divided into florets
  • 4 salmon fillets
  • Slices of fresh, unwaxed lemons to go onto the top of the fillets
  • Sea salt and freshly ground black paper
  • Fresh or dried herbs, Italian Herbs or fresh tarragon

  • Heat the oven to 200C/180C Fan/Gas 6.

  • Put oil and sweet potatoes on baking tray and season.   Roast for 15 minutes.

  • Toss cherry tomatoes and broccoli with sweet potatoes, roast for 15 minutes until tomatoes nearly burst.

  • For the simple cooking presentation, nestle salmon into a separate dish, top with butter and lemon slices, seasoning, cover and bake for about 15 minutes.

  • This could be served with Cucumber Raita sauce
