Salmon with a Hot Mustard Sauce

Salmon with a Hot Mustard Sauce

This is a guest recipe from Leith’s Cookery school.


This is a very simple and straightforward salmon recipe to prepare and cook, but the addition of the hot mustard sauce mix is very tasty fish even nicer.







Ingredients 


(4) or 170g / 6 oz of salmon fillets 


For the marinade:


1 tablespoon of light brown sugar


2 tablespoons of light soy sauce


1 tablespoon of lemon juice


2 tablespoons of dry white wine


Freshly ground black pepper



For the sauce


290 mil/half a pint of double cream


1 1/2 tablespoons of whole-grain mustard


Half a tablespoon of Dijon mustard


2 teaspoons of Worcestershire sauce


1 teaspoon of castor sugar


Squeeze of lemon juice


Freshly ground black pepper


Sea salt


1 tablespoon of chopped dill



To garnish:

Sprigs of dill




AND THIS IS WHAT YOU DO …


  1. Pre-heat the oven to 180 C/Gas 4. 

  2. Place the fillets of salmon on a large baking sheet lined with kitchen foil.

  3. Mix together the marinade ingredients.

  4. Spoon over the salmon and cover with kitchen foil.

  5. Leave to stand for 15 minutes. Put the fish in the oven for 12 to 15 minutes until cooked ( it should be opaque and firm).

  6. Meanwhile, make the sauce.

  7. Put the cream, mustard‘s and Worcestershire sauce and sugar in a saucepan, bring to the boil and simmer for 10 minutes until the liquid is reduced and syrupy.

  8. Season to taste with pepper, salt and lemon juice, then add the Dill.

  9. To serve: lift the cook salmon from the baking sheet and arrange one on individual plates.

  10. Coat each with sauce, and garnish with Dill.
