Salmon with Roasted Asparagus

Ingredients


400g / 14oz of new potatoes , halved if large


2 tablespoons of olive oil


8 asparagus spears , trimmed and halved


Two handfuls of cherry tomatoes


One tablespoon of balsamic vinegar


2 salmon fillets , about a 140g / 5oz each


A handful of basil leaves




AND THIS IS WHAT YOU DO …


  1. Heat the oven to 220 C/fan 200 C/gas 7.

  2. Tip the potatoes and 1 tablespoon full of Olive Oil into an oven proof dish, then roast the potatoes for 20 minutes until starting to brown.

  3. Toss the asparagus in with the potatoes, then return to the oven for 15 minutes.

  4. Throw in the cherry tomatoes and vinegar and nestle the salmon among vegetables.

  5. Drizzle with the remaining oil and to return to the oven for a final 10 to 15 minutes until the salmon is cooked.

  6. Scatter over the basil leaves and serve everything scoop straight from the dish.
