Spicy Lentil Soup
Serves 4
Full of flavour and warming for those cold Winter evenings.
Ingredients:14oz can of lentils
14oz can of chopped tomatoes
1 medium onion finely chopped
2 tbs olive oil
l fat clove of garlic crushed
1-2 tbs balsamic vinegar
1 tbs dried basil
¼ tsp mixed spice
Sea salt and freshly ground black pepper
¾ pint chicken or vegetable stock. (you may want to increase quantity).
AND THIS IS WHAT YOU DO………….
- Gently fry the onion in olive oil until soft.
- Add the garlic, basil and mixed spice.
- Mix together and then add the lentils and chopped tomatoes.
- Add vinegar and then add stock according to required thickness.
- Stir together and simmer gently for 5 – 10 minutes.
- Serve with hot crusty rolls or ciabatta bread.
- If made to a thicker consistency, serve with rice and a green salad – baby spinach leaves tossed in french dressing. Or garlic and parsley potatoes mashed in olive oil instead of rice.
