My daughter picked up the recipe card from Waitrose a few years ago, and we all decided that this had to be the very best Toad in the Hole any of us had ever eaten.   The addition of the apple made all the difference, plus extra onion and we did use the sausages recommended and this then became a firm favourite

 
 
Ingredients

2 tbsp olive oil

Pack of Waitrose 6 British Pork, Leek and Chive Sausages, or any other good quality sausages of your choice

2 medium onions,  sliced or cut into wedges - as you like

2-4 English Cox Apples, cored, peeled and sliced thickly (or any other good eating apple)

6 fresh sage leaves

100mml Pure Apple Juice

100g plain flour, you may want to add a little more flour to make the batter a bit thicker

2 essential  Free Range Eggs, beaten

250ml  Semi Skimmed Milk
 
 

AND THIS IS WHAT YOU DO.....
  1.     To make the batter, ift the flour into a bowl and season.

  2.     Whisk in the eggs, apple juice and milk to give a smooth batter.

  3.     Now cover and leave in the fridge for a minimum of one hour, longer is better.

  4.     Pre-heat the oven 220C, gas mark 7.

  5.     Place the oil in a large frying pan, Add the sausages, and baste with the hot oil and fry for about 4-5 minutes.   Be very careful not to burn the sausages, but just let them become golden.

  6.     Now add the sliced onion, baste some more and cook for a further 5-7 minutes.

  7.     Transfer the saussages and onion into a roasting dish and add the apple slices or quarters.

  8.     Tear the sage leaves into pieces and scatter over the sausages.

  9.     Pour the batter over the sausages and return to the oven for 25–30 minutes until the batter is puffy, crisp and golden and the sausages are browned and cooked through.

  10.     Serve with creamy mashed potato and spring greens.
