Turkey Steaks with Clementines

Serves 4

Preparation: 10 minutes

Cooking Time: 15 minutes

Ingredients:

2 tbsp sunflower oil

4 lean turkey steaks

200g/8oz mushrooms, sliced

2 tsp paprika

2 tbsp redcurrant jelly

50ml/2fl oz Clementine juice (2-3 fruits)

1 tbsp red wine vinegar

AND THIS IS WHAT YOU DO…

1.  Heat 1 tbsp of the oil in a frying pan, add the steaks and fry quickly until browned on both sides (the steaks will be underdone in the middle at this point).

2.  Remove from the pan, add the remaining oil, then fry the mushrooms until softened.

3.  Return the steaks to the pan, sprinkle in the paprika and stir in the redcurrant jelly and Clementine juice. Bring to the boil, stirring to dissolve the jelly. Simmer for about five minutes, turning the steaks over halfway through, until the meat and mushrooms are tender.

4.  Serve with mashed potato and season vegetables.
